Here’s a veggie recipe that I devised for the slow carb diet, an eating plan out of The 4-Hour Body. All of the ingredients can be purchased at Trader Joe’s retail grocery stores.
Some slow-carb enthusiasts might object to the use of soy sauce and rice vinegar, but in my own experience, the small amounts used have never interfered with weight loss progress, so I don’t mind using it.
Asian Broccoli Slaw Recipe
Ingredients:
- Broccoli Slaw (1-2 bags)
- Minced Onion, Shallot, Garlic Mix (1 carton)
- Soy Sauce (reduced sodium)
- Rice Vinegar
- Sesame Oil
- Pistachio Meat (pistachios without the shell)
Coat the bottom of a medium sized skillet with coconut oil. Add a tablespoon of the minced onion, shallot, and garlic mixture. Sprinkle in about a dozen pistachios. Let this cook on low heat for 1-2 minutes. If the garlic/shallots turn brown, the heat is too high.
Add a fistful of broccoli slaw to the pan. Then add a splash or two of rice vinegar, and 3-4 splashes of soy sauce. Lastly, add 1-2 teaspoons of sesame oil (I prefer 2).
Mix the ingredients around with tongs, then cover with lid and let steam on low/medium heat for about 5-10 minutes. I recommend mixing the contents a few times during the process to help insure the flavors spread evenly.
Let the steam do all the work, don’t try speeding it up with higher heat.
Once finished, drain the saucepan and add the mix to your plate. Enjoy!
